THE ANCIENT TAVERNS IN BOLOGNA
A lovely walk through the ancient pubs in the historical city centre. The presence of university students has helped the opening of this kind of "shops" since the XIIIth Century and also today, among the narrow streets of the medieval town, some XIVth Century pubs are still very crowded. This kind of reality didn't change during the centuries and today, like ever, Bologna night life is peculiar for its vivacity and innovation. It is a pleasant walk during the whole day but it suggested during the evening and the night to taste better the most typical Bologna atmosphere. If you like it is possible to taste some local food products.

An unforgettable experience amidst one of the area's most attractive settings: a leap back in time.

  • Guided tour of the enchanting medieval hamlet of Dozza (the Romanesque church, the village surrounded by the ancient walls and its paved alleys, the imposing castle)
  • Wine tasting, in the company of professional sommeliers, from the fine "special reserve" wine collection in the vaults of the fortress, and tasting of some local specialities to accompany an aperitif
  • Dinner in an attractive restaurant not far from the castle (2 minutes on foot)

PASTA-MAKING: A DEMONSTRATION
Demonstration from the traditional pasta-makers, the "sfogline" of Bologna.
With skill and patience, these ladies with their magic touch will teach the curious visitor the secrets of making and rolling out the pasta in the spacious rooms of a picturesque restaurant built in the vaults of a noble fifteenth-century building in the town centre.
Duration of the demonstration: 60 min. approx.

NOT JUST PASTA
In a typical Bolognese restaurant you can try your hand at rolling out pasta for yourself, making Bolognese ragout or concocting a delicious dessert, under the watchful eyes of some of the town's best chefs. Later, at dinner, you'll have the chance to taste what you've made.

FOOD AND NATURE
Why not see what it's like to live the everyday life of a typical Bolognese family? Go shopping with the lady of the house and find out how to choose the best products and put together a complete menu. You'll also learn how to set the table with your own individual style and enjoy the good foods you've created at lunch/dinner all together. At the same time, enjoy the beautiful natural setting of the green countryside, in traditional old farmhouses or noble villas. You may even stay the night in these splendid residences if you like.

A REAL COOKERY SCHOOL
This institute is not far from the town centre. It offers spacious well-equipped working areas and the professional skills of trained teachers. Different teachers will bring their special talents according to the particular dish and the wine being tasted. There will be a brief tasting session at the end of every lesson.

Guided tour of the enchanting medieval hamlet of Dozza (the Romanesque church, the village surrounded by the ancient walls and its paved alleys, the imposing castle) and dinner near the fortress with Middle Ages dresses, Renaissance menus from Matlde di Canossa times. Dinner will be served in "old style" bowls and light assured by candles and torches. A real leap back in time with a taste of several courses extrapolated from the old records of the castle banquets.

About Bologna...
Until the late nineteenth century, when a large-scale urban reconstruction project was undertaken, Bologna remained one of the best preserved Medieval cities in Europe, though to this day it remains unique in its historic value. Despite having suffered from considerable bombing damage in 1944, Bologna's historic centre, one of Europe's largest, contains a wealth of Medieval, Renaissance, and Baroque artistic monuments of primary importance. Bologna developed as an Etruscan, then Roman colony along the Via Emilia, the street that still runs straight through the city under the changing names of Strada Maggiore, Rizzoli, Ugo Bassi, and San Felice. Due to its Roman heritage, the most central streets of Bologna, today largely pedestrianized, follow the grid pattern of the Roman settlement. The original Roman ramparts were supplanted by a high medieval system of fortifications, remains of which are still visible, and finally by a third and final set of ramparts built in the thirteenth century, of which numerous sections survive. Over twenty medieval defensive towers, some of them leaning precariously, remain from the over two hundred that were constructed in the era preceding the security guaranteed by unified civic government. Numerous important churches, such as Santo Stefano, San Domenico, San Francesco, Santa Maria dei Servi, San Giacomo Maggiore and San Petronio, punctuate the city's skyline with their tall spires and noteworthy architecture. The cityscape is further enriched by elegant and extensive arcades (or porticos), for which the city is famous.
